Bombay Spicy Grilled Bananas with Caramel & Vanilla Ice Cream

Serves 4

4 Indian Mango Curry Seasoned Skewers
4 ripe, but firm bananas
1/2 cup caramel sauce
vanilla ice cream
Garnish: toasted coconut

Soak skewers in water for 10 to 15 minutes.

Peel each banana and cut each into 3 pieces.

Thread 3 pieces onto each skewer. Let sit for 15 to 20 minutes in refrigerator, covered

Lightly brush bananas on each side with vegetable oil.

Place on a preheated medium-high grill and cook about 2 to 4 minutes per side, or until bananas are softened and they have caramelized grill marks.

Serve on top of scoops of vanilla ice cream drizzled with caramel sauce. Garnish with coconut.

Chef's Suggestions: Try substituting the Indian Mango Curry skewers with Thai Coconut Lime Seasoned Skewers for a Pacific Rim twist.
