Grilled Summer Fruit

Serves 4

4 Citrus Rosemary Seasoned Skewers
2 ripe, but firm nectarines cut in quarters
4 ripe, but firm italian prunes or plums, cut in half
4 ripe, but firm apricots cut in half
honey for drizzling
Garnish: fresh rosemary (optional)

Soak skewers in water for 10 to 15 minutes.

Thread onto a skewer in the following order: nectarine-plum-apricot, using 1 piece of each. Repeat 1 more time. Repeat with remaining skewers.

Let sit for 20 – 30 minutes at room temperature

Lightly brush skewers on each side very lightly with vegetable oil.

Place on a preheated medium-high grill and cook skewers until fruit is nicely grill-marked, about 3 to 4 minutes per side. Serve drizzled with honey and garnished with small sprigs of rosemary if desired.

Chef's Suggestions: Serve as a more savory dessert alone or with a dollop of mascarpone. Also great served with a summer cheese plate. Try drizzling with flavored honeys such as blackberry or chestnut. These fruit skewers are also wonderful as an accompaniment to grilled or roasted pork.
