Oven Roasted Mushroom and Sweet Onion Skewers

Makes 6 appetizer servings

6 Callisons Garlic Herb Seasoned Skewers (appetizer size)
12 each crimini mushrooms*
1 medium sweet onion (like Walla Walla), cut into 18 square chunks
2 tablespoons fresh lemon juice
2 tablespoons chopped Italian parsley
1 teaspoon minced garlic
3 tablespoons extra virgin olive oil
1/2 teaspoon salt
fresh ground pepper

Carefully thread in the following order: onion, mushroom, onion, mushroom, onion - onto each skewer. Let skewers infuse for at least 15 minutes, or up to overnight, covered and refrigerated.

Preheat oven to 425 degrees.

In a large bowl, combine lemon juice, parsley, garlic, olive oil salt and pepper to taste. Gently toss mushroom and onion skewers with the parsley mixture, coating well.

*Chef's Hint: Microwave mushrooms before skewering for about 10 seconds to prevent breaking.
