Spicy Turkey Tenderloins with Sugar-Free Cranberry Sauce

This recipe is for you if you're looking for a big flavor, low-fat and low-carb option for turkey.

For a more traditional turkey flavor pairing substitute the Fiesta skewers with Mediterranean Garlic and Herb Seasoned Skewers.

Makes 2 – 4 servings

4 Callisons Mexican Fiesta Seasoned Skewers
1 pound turkey tenderloins (this should be 4 pieces; if large, cut in half lengthwise)
2 teaspoons olive oil
salt and pepper to taste

Sugar-Free Cranberry Sauce
1 cup cranberries
1/8 teaspoon grated nutmeg
1/8 teaspoon ground cinnamon
2 tablespoons water
1 tablespoon cider vinegar
2 packet of Equal

Insert a skewer lengthwise into each of the tenderloins. Let sit at room temperature for at least 30 minutes or refrigerated overnight.

Meanwhile, make the cranberry sauce: Combine the cranberries, spices, water, and vinegar in a small saucepan. Heat over medium-high heat until the mixture comes to a simmer. Then cover and cook for about 3-4 minutes, or until cranberries are tender and "popped." Let cool to room temperature then stir in the Equal. Serve warm, room temperature or chilled. Refrigerate until ready to serve.

Pre-heat the grill to medium-high. Lightly oil the turkey skewers on each side, and sprinkle with salt and pepper to taste. Grill skewers for about 3 minutes on each side, or until cooked through and nicely grill-marked. Serve with the cranberry sauce.
